First...gather your ingredients.
- 3 ripe medium bananas
- 1/3 cup unsweetened apple sauce
- 1 1/4 cups unbleached all purpose flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2 tbsp butter, softened
- 1/3 cup light brown sugar
- 2 large egg whites
- 1/2 tsp vanilla extract
- 8 Tbsp of Crunch Peanut Butter
- Handful of Golden Raisins
Mash bananas in a bowl. This is my handy dandy masher that I bought at William Sonoma. It is one of my favorite kitchen tools. Well worth the money.
In a medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside.
In a large bowl cream butter and sugar with an electric mixer. Add egg whites, bananas, apple sauce, vanilla, and 8 tablespoons of crunchy peanut butter, and beat at medium speed until thick. Scrape down sides of the bowl. I love electric mixers...they remind of when my mom let me lick the beater! :)
Add flour mixture, then blend at low speed until combined. Do not over mix.
Divide the batter into each muffin tin equally. You will want to fill them almost up to the top. Sprinkle golden raisins on top. Bake for 30 minutes. Use a toothpick to make sure they are cooked through.
If you need to reheat...just pop they in the microwave for 15 seconds the next day.
Enjoy with some fruit and some rocking Elvis tunes. Yum.
